1 C coconut water

2 ½ C diced pineapple, fresh or frozen

1 C firmly packed baby spinach

1 ½ t finely chopped red onion

2 T chopped cucumber

¼ C finely chopped cilantro

1 t finely chopped jalapeno pepper

2 t freshly squeezed lime juice

Pinch of grated lime zest

Pinch of salt

1 C ice

Put all ingredients in blender and puree until smooth and creamy.

Per serving: 138 calories, 1 g total fat, 0 g saturated fat, 0 g trans fats, 0 mg cholesterol, 142mg sodium, 34 g carbohydrates, 5g fiber, 24 g sugars, 3g protein
